Healthy Recipes by Dr. John Fitz Gibbon The "And Good For You Too" Page My brother John is a very fine doctor. This is an accepted fact among his patients and at his hospital. It is less well known that he is a passionate fisherman and a very good cook - excelling in long haul hikes down steep canyons, and manly preparations of beans and whole grains and the like. A few of his recipes follow with his own comments. We have not yet included some of his high fiber test pieces, like Waste-Not-Want-Not-Bread, a twelve grain, four pound, eight inch loaf - perfectly edible but not for the faint of heart. The recipes below are all delicious, easy to make and very good for you! Marinara Sauce This may seem too simple, but my philosophy of cooking puts ease of production of dishes at a premium. Marinara sauce is also quite versatile; it goes with pasta, of course, but also with polenta or as extra sauce for lasagna. This recipe is heavy on garlic but because it's reduced by cooking for a long time, the flavor is sweet as well.
Crush the tomatoes up with one hand (watch out, they shoot out juice when you squish them) and place in saucepan. Reduce over moderately low flame to about 60% of the original volume. This usually takes about 2 hours. Toward the end of the cooking time, perhaps 30 minutes before the end of reduction, add the garlic, oregano, and parsley. Five minutes before the end, add the olive oil. Serve over pasta or polenta with liberal amounts of Romano cheese. Cannelloni Bean Dip This bean dip recipe came originally from Gourmet magazine about a decade ago. I like it not only because it tastes good but also because it isn't fatty at all, and is made entirely from healthy ingredients.
Process the beans to a paste in food processor. Add in all the other ingredients and process to mix. Serve with chips, raw vegetables. Familia, A Raw Granola Everyone in the family will laugh when they see the infamous familia recipe. I started making it when I was in ninth grade and have kept at it ever since...guaranteed to keep you regular.
Chop up the indicated ingredients and mix everything together. Eat with milk and fresh fruit for breakfast.
